  • 1/4 agave syrup
  • 2 tbsp baking powder
  • 1 cup flour
  • 1 tsp cinnamon
  • 1/2 cup ground flax
  • 2 mashed bananas
  • 1/2 cup chocolate chips
Instructions
  1. In a large bowl mix all the wet ingredients together, then add in dry and mix until coated. Add the chocolate chips last.
  2. Preheat oven to 400. Spray a muffin tin with cooking spray and fill muffin cups 3/4 of the way.
  3. Bake for 20 minutes. Ovens do vary so make sure the muffin is cooked throughout by inserting a cake tester.

This recipe is so easy and quick to make. I had made a huge batch of oatmeal yesterday morning so I thought I would use cooked oatmeal in my muffins this time. Usually I always use dry oatmeal, and I do have to say that by using the cooked oatmeal – it makes the muffins so much more moist!

I also made these dairy free by using the Almond Milk but if you don’t need them to be dairy free, use whatever milk you have on hand. I try to make my recipes as healthy as possible so I mostly use agave syrup in as much as I can – it has a low GI Index so much better for your body than sugar. It also has zero sodium which we like in this house. πŸ™‚

As far as the flour goes, I used whole wheat organic flour and organic ground flax (you can buy a huge bag of this at Costco for cheap).
