Latkes are a win-win in our house – we all love them and they disappear extremely quickly. But having a toddler who has suddenly become more picky with her food choices, I am having to get a little creative with hiding the veggies. So with our latest batch of latkes, I added broccoli (a lot of broccoli!) to our regular batter and they turned out great! You could barely even taste the broccoli in them. 🙂
- 6 russet potatoes (boiled)
- 3 eggs
- flour
- cheese (3 oz or more)
- 1 lb broccoli (chopped and steamed)
- garlic powder
- sea salt (optional)
- pepper (optional)
- Peel, chop and boil potatoes until soft.
- Chop and steam broccoli.
- In a large bowl, mash the cooked potatoes with 3 eggs, add broccoli and continue mashing together
- Add garlic powder and any spices and salt to the mixture and mix well
- Add about 1/2 cup flour (more if necessary) to thicken the mixture slightly.
- Grate cheese and mix into batter.
- Heat oil (I use grapeseed) in a frying pan or skillet, once hot, add large spoonfuls of the latke mixture and fry until golden on each side.
