This recipe turned out great and you really cannot taste the spinach in these! My toddler absolutely loves these muffins and I feel so much better about her eating them when I know they contain all that veggie goodness 🙂
- 2 eggs
- 1/2 cup milk (I used Almond Milk)
- 1 tsp vanilla
- 1/2 cup agave syrup
- 1/5 cups cooked oatmeal
- 1 cup flour
- 1/2 cup ground flax
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 mashed banana
- 4 cups fresh spinach
- 1/2 cup applesauce
- Preheat oven to 350 degrees.
- Mix the eggs, milk, vanilla, and agave in a bowl and whisk together.
- In a separate bowl mix the dry ingredients, then mix the dry into the wet. Add the oatmeal and mix until blended.
- In a Vitamix or blender, puree the spinach and applesauce, then pour the puree into the muffin batter. Mix the puree in and the mashed banana but do not over mix. Makes about 15 muffins.
- Pour into muffin cups and bake about 20-25 minutes.
