I recently made these roasted veggies and they were so good I immediately had to make another batch. Even my husband, who does not like veggies at all, loved these! Next time I’m going to try adding a few different kinds of veggies such as broccoli, cauliflower and squash. Yum!
Perfect Roasted Veggies
Preheat oven to 425
Cut veggies into strips or cubes (I used sweet potatoes, carrots and zucchini)
Put all veggies in large mixing bowl and pour in about 1/8 cup of olive oil. (Add more if needed depending on how many veggies you’re cooking)
Add spices (I used garlic powder, sea salt and an Italian seasoning blend)
Toss veggies with the oil and spices until well coated.
Cover baking sheet with parchment paper and spread veggies on top.
Put into oven and flip veggies once while cooking – usually at about 10 minutes
The cooking time will vary depending on your oven so keep checking these. I have a very hot gas oven and my veggies were cooked in about 15-18 minutes total.
