No matter what the season old fashioned Apple Fritters are a welcome treat, a tasty cousin of the doughnut. Crisp and sweet with a soft apple dotted center, they are a great breakfast treat, dessert or anytime snack. Perfect with a large glass of milk or hot coffee kids and adults alike will gobble them up and you will be left with only a plate of crumbs and sugar bits.
1 ½ med to large apples
¼ cup granulated sugar
1 large egg
½ cup whole milk
½ tsp. Vanilla or Almond extract
1 cup flour
1 ½ tsp. ground Cinnamon
2 tsp. Baking powder
½ tsp. Salt
1 tsp. Lemon juice
To coat: `An additional 1/4 cup granulated sugar and 1 ½ tsp. Cinnamon combined.
Heat 2-3 inches of oil in a pan on medium heat to 375°
Peel, slice and finely chop apples, toss in lemon juice and set aside.
In a large mixing bowl combine flour, sugar, baking powder, cinnamon and salt.
Stir in egg , vanilla, and milk.
Add apples and combine well.
Drop spoonfuls of batter in the size you desire (they will double in size when cooked)into hot grease and fry for 2-3 minutes, flip, and fry for another 2 minutes on the reverse side. They should be a nice golden brown color.
Place on paper towel lined plate to drain excess grease.
Toss still warm fritters in cinnamon and sugar to coat.
